Papas arrugadas con mojo — small wrinkled potatoes boiled in heavily salted water, served with red (spicy mojo rojo) or green (herb-based mojo verde) sauce — is the island's signature dish, found on nearly every menu.
Gofio, a toasted grain flour dating to Guanche times, appears in everything from soups to desserts. Fresh seafood is excellent along the coast, particularly vieja (parrotfish) and octopus. Try conejo en salmorejo (rabbit in a garlic-paprika marinade) inland, and finish with bienmesabe, an almond-and-honey dessert. Canarian wines from volcanic-soil vineyards pair well with most local dishes, and are far less known internationally than they deserve.
